The easy route at the grocery store involves seasoning packets filled with cornstarch, sugar and preservatives. I like to think that when you start with a high-quality foundation, you can cut out that “stuff”.

Ingredients

  • 1 lb NCR 100% Grass-Fed Ground Beef

  • 1 tsp Chili Powder

  • ½ tsp Cumin

  • ½ tsp Garlic Powder

  • ½ tsp Coarse Sea Salt

  • ¼ tsp Cracked Black Pepper

  • 2 large tomatoes (diced)

  • ½ white onion (finely chopped)

  • A handful of fresh cilantro and a squeeze of lime juice

  • Corn tortillas or large lettuce leaves for a lighter option

Because our ground beef is grass-fed and finished, the fat is where the nutrients and the flavor live.

When you brown this beef, don't drain it all away!

That small amount of liquid is what carries the spices and keeps the meat tender.


Directions

  1. The Salsa: In a small bowl, combine your tomatoes, onion, cilantro and lime juice. Set it aside. Doing this first allows the flavors to settle while you focus on the beef.

  2. The Sear: Heat a large skillet over medium-high heat. Add the ground beef, breaking it up with a spoon. You’re looking for a good brown sear—that’s where the flavor foundation is built.

  3. The Spices: Once the beef is browned, add your spices directly to the pan. Stir for about a minute to let the heat "wake up" the flavors.

  4. The Simmer: Add a small splash of water (about ¼ cup) to the pan. This helps the spices coat the beef evenly without drying it out. Let it simmer for 2-3 minutes until the water has mostly evaporated.

  5. The Assembly: Briefly warm your tortillas in a dry pan. Fill them with the seasoned beef and top generously with your fresh summer salsa.
