In the professional world, we call that "noise"—activity that doesn't actually lead to progress.
Usually, those additives are just there to mask low-quality meat.

We’re skipping the four-hour "from-scratch" buns to focus on the results: a perfectly grilled, nutrient-dense meal that respects your time and your family’s health.
Ingredients
2 lb NCR 100% Grass-Fed Ground Beef: Keep it cold until the moment you form the patties to protect the natural fats.
The Precision Seasoning: 1 tsp Coarse Sea Salt and ½ tsp Cracked Black Pepper. (We use real minerals, not "seasoning salts" with anti-caking agents).
The Vessel: High-quality toasted Brioche or Sourdough buns sourced from a trusted local baker.
The High-Heat Fat: A pat of grass-fed butter or a smear of beef tallow for the skillet or grill grates.
Jim’s Tip
Because 100% grass-fed beef is leaner, it cooks about 30% faster than grocery store beef.
Aim for a medium-rare to medium finish (135°F–140°F). Anything more will dry it out.
Directions
Form with Intent: Divide the beef into four 8 oz portions. Handle the meat gently; over-working the beef is motion without progress that results in a tough burger.
The Thumbprint Secret: Press a small dimple into the center of each patty. This is a precision move—it ensures the burger stays flat and even as it contracts under heat, rather than doming into a ball.
Season the Exterior Only: Do not mix salt into the meat. Season the outside generously only when you are ready to head to the grill (others might tell you to wait until AFTER the burger is done cooking…that’s fine too!)
Manage the Heat: Get your grill or cast-iron skillet to high heat. You want a sear that locks in the results of our pasture management.
The Essential Rest: Let the burgers rest for at least 3 minutes. This pause allows the juices to redistribute, ensuring a premium outcome on every bun.
