On the ranch, steak isn’t something complicated. It’s honest food.

The kind of meal that doesn’t need much dressing up — just good beef, a hot pan and a little attention.

A lot of folks shy away from cooking steak in the oven because they’re afraid it’ll dry out.

And truth be told, it can… if it’s left too long or cooked without care. We won’t do that though…will we?

But the oven can be one of the simplest, most reliable ways to cook a steak — especially on a busy night when there’s no time for a big production.

  • The key is keeping it quick, hot and simple.

Done right, you’ll have a steak dinner on the table in about 15 minutes.

A good steak starts long before it ever hits the skillet.

Michigan grass-fed beef has a kind of clean, natural flavor that comes from the way it’s raised —open pasture, fresh air and cattle doing what they were meant to do. Eat!

That kind of beef doesn’t need heavy sauces or complicated seasoning.

It just needs honest cooking and a little respect for the cut.

When the beef is raised right, the recipe gets simpler.


What’s the Best Cut of Steak for an Oven Bake Finish?

If a steak is going in the oven, it’s worth choosing the right one.

Thin, lean cuts don’t have much forgiveness. They dry out fast. Don’t even try it.

The best oven steaks are thick and well-marbled, like:

  • Ribeye (#1 choice)

  • Strip steak, T-Bone, Porterhouse

  • Top Sirloin, Filet Mignon

Thickness matters too.

Aim for at least 1 ½ inches.

If you can find it, 2 inches could be even better.

That gives you time to build a crust on the outside without overcooking the inside.

Materials Needed for Oven Baked Steak

Nothing fancy—just the tools that get the job done right:

  • A cast iron skillet (best for searing)

  • A sheet pan or baking dish (optional backup)

  • Olive oil, cultured oil, beef tallow or avocado oil

  • Salt and black pepper

  • Your favorite herbs (rosemary, garlic, thyme)

  • Butter

  • Meat thermometer (don’t guess)

  • Foil

How to Bake a Steak in 15 Minutes or Less

Here’s the method that works time after time.

 Bring steaks to room temperature

  • Take them out of the fridge about 30 minutes ahead of time.

Preheat oven to 400°F

  • Heat your skillet on the stove with a little oil until it’s hot.

Prep the steak

  • Pat dry with paper towels

  • Lightly brush with oil

  • Season generously with salt and pepper

Sear it fast

  • Sear 2 minutes on the first side

  • Flip and sear 2 minutes on the second side

  • If thick enough, sear the sides also for about a minute.

Finish in the Oven

  • Add a small pat of butter to each steak… or maybe more butter!

  • Place the skillet on the middle rack

  • Bake about 5 minutes, then check temperature 

    • Medium-Rare: 130°F

    • Medium: 135°F

    • Or trust yourself and go by feel

 Rest before slicing/serving !!!!

  • Remove steaks, cover with foil and let them rest about 7 minutes.

  • This where the tenderness settles in.

Ingredients

  • 4 Northern Michigan 100% Grass-Fed Beef Ribeye Steaks

  • 1–2 tsp sea salt

  • 1 tsp freshly ground black pepper

  • Your favorite herbs like rosemary

  • 1/2 tsp garlic powder

  • 1-3 tbsp butter


Directions

  1. Remove steaks from the refrigerator.

  2. Pat them dry and season generously with on all sides.

  3. Allow them to sit at room temperature for 20 minutes. Meanwhile, preheat your oven to 400-450°F.

  4. Heat a cast iron skillet (or your favorite oven-safe skillet) with butter or olive oil over medium-high heat.

  5. Sprinkle the pepper and garlic powder on the steaks.

  6. Once the pan is hot, place the steaks in the pan. Sear for 1–3 minutes per side until a golden-brown crust forms. If thick enough, sear the sides also.

  7. Place the skillet directly into the oven.

  8. Cook for 3–5 minutes, then flip carefully and cook another 3–5 minutes, until the internal temperature reaches your desired doneness. (Please don’t go over medium…ever! Ha)

  9. Remove steaks to a cutting board, wrap or “tent” with foil, and let them rest for 5–10 minutes before enjoying.
